Pilot Project

The Pilot Project is a brewery incubator, tasting room, and cafe located on Milwaukee Ave in Logan Square. This collaborative and artistically curious space serves young brewers to develop their craft in an industry with high barriers of entry. Here you will find expert brewing advice as well as mentoring services, production support services, branding assistance, branding development support services as well as distribution.

Bright Brewery Taproom is a multi-family owned, family run brewery and bar offering flavorful lagers and low ABV session beers in crowler can-style growlers for take away consumption. Using their 10-barrel brewing system they serve local beer on draft or growler for take away use; additionally they serve wine and kombucha on tap along with delicious food like Grandma’s Eggs and Mason Jar Cheesecake alongside various pizza options (including gluten free options!).

Other bright lagers and session ales to try include the pilsner-esque, lightly tart, dry Bright Sour Ale; full-bodied Staircase Porter which pairs nicely with hearty slow-cooked meals; and crisp citrusy Helles which offers a light herbal respite from all that bubbly brightness.

Bright’s version of an amber-colored session ale with tropically fruity aroma and low alcohol by volume (ABV), Pilot is Bright’s take on low ABV English IPA. Brewed using Motueka and Sultana hops for unique tropically fruity flavors and a smooth, dry finish; balanced by just the right amount of resinous bitterness and balanced resinous bitterness for balance and surprising full body for such a light style beer.
